A very crappie meal
I've outdone myself: this is one fantastic recipe! And it's easy too. You just need to follow these five steps.
Step 1: Find and catch some crappie
I found them suspended between 20 and 30 feet in 40 feet of water. Then, I caught them mostly on a drop-shot rig using small, 1" white Bass Pro Shops Squirmin' Grubs.
Step 2: Fillet the fish
Keep at least four decent sized crappie. There are plenty of "how to" videos on YouTube if you're not sure how to clean them. When you finish, put the fillets on a plate and lightly salt them.
Step 3: Make the batter
In a medium sized bowl, mix one cup of flour, a little bit of salt and pepper, and a few pinches of paprika and cayenne pepper. Add one egg and mix well. You can also add a little bit of hot sauce. Then, slowly pour in some beer and whisk with a fork until the batter has a consistency that isn't too thick or too thin. Drink the rest of the beer, and several more with your dinner!
Step 4: Dip and fry
Dip the fillets in the batter and deep fry them in canola oil. Get that oil nice and hot (but be careful, you don't want to burn your house down). Use a cast iron pan if you're camping. If you're lucky, your girlfriend will buy you one. It won't take long. When the fillets turn a nice golden brown, they're done.
Step 5: EAT IT
Enjoy the fish with your favourite side dish. I recommend steamed green beans from your local farmers' market. Goes great with tartar sauce.
